Indiana University School of Physical Education and Tourism Management
Service Learning Experience in Calnali, Mexico

   Juana Watson, a RHIT major and a native of Mexico, is organizing a one week trip to help the people in a rural village. The cost of the trip is $900.00. Five hundred dollars will be for the roundtrip plane ticket from Indianapolis to Mexico City. The remaining funds will pay for the costs of lodging in the village and in Mexico City, all meals, transportation from Mexico City to the village, and the cost of building supplies to help repair houses.

    The trip will take place from Friday, November 20th through Friday, November 27th. This will occur over the Thanksgiving holiday which would mean that few classes will be missed. This is an excellent opportunity to experience the culture of other people and to contribute to the welfare of those less fortunate. If you are interested in going, a nonrefundable deposit of $500.00 must be paid by Thursday, October 15. This will allow us to make the plane reservations in a timely manner. The remaining $400.00 will be due by Nov. 1.

Meet the RHIT Associate Faculty

   Trying to operate a successful college academic program is a major task. With only three full-time faculty members, the RHIT Department finds this especially true! In order to present an extensive program curriculum each semester, it becomes necessary to hire qualified part-time faculty to meet ever-growing student needs. The RHIT Department welcomes the following part-time faculty for the fall semester:

   
Ahmed Ismail is teaching RHIT 181 (Lodging Management) course. Ahmed graduated with a BA degree in Marketing/International Management from Gustavus Adolph us College in 1989. He has extensive experience in accounting, sales, and marketing with such prestigious operations as the Seattle Marriott Hotel, the Harley Hotel Lexington, and the Hyatt Regency Hotel - Lexington. In addition to receiving several managerial and sales awards, Ahmed has authored two books: Hotel Sales & Marketing and Catering/Convention Services.

   Carrie Fulbright is teaching the RHIT 171 (Introduction to Convention/Meeting Management) course; Carrie deserves special mention, as she is a 1996 graduate of our program! Her industry background includes being a customer service representative with the Speedway Motel and serving as Director of Meetings with Meeting Services Unlimited. Carrie has traveled a unique path as she began her career with Meeting Services as a summer intern. From there, she progressed to the position of Project Coordinator arid finally to Director of Meetings. In addition to teaching part-time, Carrie is currently pursuing a masters degree in education.

   Doug Haney is teaching the RHIT 411 (Hospitality Law) course. Doug received a B.A. degree in Economics, History, and Political Science from the University of Wisconsin and is a Cum Laude graduate of the University of Wisconsin School
of Law. His extensive industry background includes experience with the Kenosha County (Wisconsin) District Attorney’s Office, the Judge Advocate General’s Office (Virginia), and different law firms in Indianapolis. Doug has authored articles for several law publications including the Indiana Law Review. In addition to having previously taught the 411 class, Doug has taught military law classes and was an instructor for the American Institute for Paralegal Studies and an associate faculty member at Indiana University.

   Neal Singletary is teaching N231 (Human Nutrition) course within the Department of Physical Education curriculum. Neal has previously taught the RHIT 312 (Human Resource Management) and FN 303 (Essentials of Nutrition) classes for the RHIT Department. His academic credentials include B.S. and M.S. degrees in Microbiology from Southeastern Louisiana University, and a Ph.D. degree in Food Science and Technology from Louisiana State University. Neal currently serves as Consumer Safety Officer for the United States Food and Drug Administration. His background includes teaching positions at the University of Houston (College of Hotel and Restaurant Management), Houston Community College, and San Jacinto College.

   The RHIT Department is indeed fortunate to be associated with a high-caliber group such as this. The students should also feel privileged to be able to draw upon such excellent industry resources in pursuit of their degree requirements. It is these people who augment the departmental teaching mission and we look forward to our continued association.

Food Safety Seminar

   On November 5 and 6, the RHIT faculty will sponsor a two-day seminar on food safety and sanitation. Some of the topics covered include identifying the critical control points during the food handling process (HACCP); food protection in preparation and service; microorganisms related to food spoilage and food borne illness and what can be done to control them and employee sanitation training. Seminar participants are eligible to take the Applied Food Service Sanitation exam sponsored by the Educational Foundation of the National Restaurant Association. The RHIT faculty began offering this seminar in 1995 and has presented it to 295 participants with a certification success rate of 94%. The registration fee of $140.00 includes textbook, parking and snacks. Additional seminar dates are January 6 and 7; March 15 and 16 and May4and 5. Purdue RHIT Department Restructure Degree Program

   The Bachelor of Science degree program from the Purdue University - West Lafayette Department of Restaurant, Hotel, Institutional, and Tourism Management has new degree requirements. Previously, this department offered students six choices for emphasis. Now the department has three emphasis areas for majors: lodging, foodservice, and tourism. The changes are reflected in more courses concentrated in the emphasis areas. Whereas the old emphasis areas had fifteen credit hours, the new emphasis areas will require seventeen to twenty-two credits. The modified curriculum is available to IUPUI students through the Consumer and Family Science Transfer Program: that is, students may initiate course work in Indianapolis and then transfer to West Lafayette for degree completion. Depending on the emphasis area selected, students will typically take seven courses through West Lafayette. To help students with this process, some courses are available through correspondence while other courses are being developed with distance education technology. Students should meet with an advisor to assist with spring registration for this degree program.
