Indiana University School of Physical Education and Tourism Management
Students Scholarships

   For 1995-96, Cheryl Jensen was selected to receive the Max M. Shapiro Food Service Excellence Scholarship based on her essay regarding the meaning of Mr. Shapiro’s philosophy to “Cook good, serve generously, price modestly and people will come”.

   Martha Bissell and Jennifer Hechinger each qualified to receive $1,000 scholarship award from the American Hotel Foundation based on academic excellence for their class level.

   Juana Chickedantz has been nominated by the department for the Hyatt Foundation’s Minority Scholarship. Juana has a G.P.A. of 2.88, has excellent work experience as the Catering Manager at the Columbus Inn, and has been very active in service projects. The winner will be announced in late April.

Department Service

   The Indiana Restaurant and Hospitality Association recently held its annual state meeting at the Indianapolis Convention Center. On Thursday, March 2 nearly 200 high school students attended seminars on various aspects of management, career options, and food preparation skills. Duane Hinkle, Dohn-Anthony Wright, Jenny Jones, Birgit Hollaus, Hui Yen Cheong, Betty Carson, Dawn Sheridan, and Colleen Bryan helped to monitor the programs and students.

   The following group of students worked at the RHIT booth: Stephanie Delong, John Strouse, Eddie Nefouse, Billy Gottlieb, Carrie Wright, and Joyce Clark.

Student Committees

   Several student committees met throughout the year to add focus on areas of development for the department. As members of the RHIT Student Council, Chien-Yang Chen, Martha Bissell, Tracy Goldblum, Michael Adcock, and Juana Chickedantz made recommendations regarding the appropriation of student activity monies, departmental recruiting,, and mentoring programs. Robert Denman and Jennifer Hechinger served on the Academic Affairs Committee and reviewed the departmental documents. The Student Affairs Committee representatives were David Willem and Kari Bonwell who added ideas for student recruitment. The department appreciates the time and energy which these students contributed.

RHI 292 Meal Service

   The “Total Quality Management in Restaurant Operations and Service” class (RH! 292) is presenting a series of four luncheons as part of the service component of the course. Two luncheons have already taken place, but space is still available for the remaining two luncheons: April 10 and April 17 (both Mondays).

   The luncheons take place at Ivy Tech State College between 11:30 a.m. and 12:30 p.m. Seating is limited to twenty people and reservations are required. The menu features the following items: cream of broccoli/cheese soup; baked stuffed mushrooms; BBQ chicken wings; roast beef Manhattan; turkey croissant; chef salad bowl; Hawaiian chicken; southern-style green beans; seasoned parslied carrots; cole slaw; fresh fruit cup; and hot apple crisp. Honors Convocation

    The Indiana University School of Physical Education’s Honor Day Convocation will be Sunday, April 23 at 1:00 p.m. at the National Institute for Fitness and Sport Auditorium with a light buffet reception following in the Physical Education student lounge. Student organization officers and all scholarship winners will be recognized. This will be a very nice conclusion to the spring semester and all students are encouraged to attend. Students may bring a guest. RSVP to: Mrs. Harris (274-0600) by noon April 17.

Congratulations Graduates!!!

   Commencement will be May 14 at 2:30 p.m. in the RCA Dome.
   Attendance is open to all and tickets are not required. It is not too late to order a cap and gown. If you need a form, see me. John Strouse, RHS President, will be responding to the charge given by President Steven Beering to the Purdue Graduates.

Applied Food Service Sanitation Seminar

   The RHIT Department will be offering a two-day sanitation review seminar on August 11 and 12 from 7:30 a.m. - 4:30 p.m. at IUPUI, School of Engineering and Technology, Room 202. The seminar fee of $130.00 includes the text and sitting for the Educational Foundation’ s National Sanitation Certification Exam. Please contact me at 274-2599 for additional information.

   Due to the shared laboratory facilities with IVY Tech, the following courses will be offered following a strict pattern of frequency. It is very important that all majors plan for the sequence of these courses in order not to delay graduation.

FN 203: fall session
RHI 292: spring session
RHI 291: summer I session
RHI L291: summer I session
RHI 391: fall session
RHI 492: fall and spring session 1995-96 and only spring session after that.

Advisory Committee

   The RHIT Department’s Advisory Committee met two times this year and provided valuable assistance with the department’ s assessment documentation and ideas on recruiting students. Summer/Fall Classes

   The following classes will be offered by RHIT during the summer sessions.

Summer I (May 10-June 21)


FN 303: Essentials of Nutrition, 3 credits, Monday-Wednesday, 5:45 p.m.-9:00 p.m., ET 201.
(Basic nutrition and its application in meeting nutritional needs of all ages. Consideration is given to food selection, legislation, and community nutrition education programs.)

Summer II (June 26-August 7)

RHI 212: RHIT Organization and Management, 3 credits, Monday-Wednesday, 5:45 p.m.-9:00 p.m., ET 201, prerequisite RHI 100.
(The principles of planning, organizing, leading, and controlling as applied to the hospitality service industry. Topics relating to motivation and leadership will be stressed. Issues of organizational change, organizational
Effectiveness and the nature of managerial work will be addressed.)

IUPUI has four admission options:

  1. Degree seeking undergraduate student.
  2. Graduate continuing non-degree seeking student: if you have a Bachelor’s degree and are not admitted to a graduate program at IUPUI.
  3. Transient student: if you are working on a degree from another institution and wish to take courses at IUPUI.
  4. Temporary student: if you are sponsored by your employer to enroll in a specific course or wish to take a course for self-enrichment.

    A wide variety of classes will be offered in the fall including Specialty Foods (Catering) and Meeting and Convention Sales.

Chicago Trip

    Members of the Restaurant and Hotel Society will be attending the 76th Annual National Restaurant Association’ s Hotel-Motel Show in Chicago from May 20 to May 24, 1995.

    At the show, members will meet industry leaders including equipment suppliers. Members can also view the ice carvings, food preparation entries for culinary competitions, college and university information booths from around the country and attend meetings and seminars on current and future industry trends and issues.

    The RHIT Department would like to congratulate Joyce Clark and Kelly McNeely who were nominated as Student Honor Delegates to this year’s National Restaurant Association Educational Foundation’ s “Salute to Excellence” Student Forum and Awards Banquet that will be held at the Chicago Hilton and Towers Hotel on Tuesday May 23, 1995.
